The vibe of today has to be leaving a workout class going to the grocery store and eating watermelon (the first good one of the year) while driving with the car windows down and no fucks given. I’m calling it hydrating!
I'm going to make a recipe tonight from 60 minute gourmet - shrimp and tequila, really it should be served with rice, but the watermelon as an appetizer will probably do just fine. Note. I totally made the rice. Do not skip it. Also, don’t mess with the amount of cream. It’s fine!
How To:
The last week has been a little disorienting to say the least. I haven't worn glasses since I was 10 years old or before? I'm a contact wearer. And I had an eye ulcer on my cornea which is in the bacterial sort of deal so I wonder if I got dirt in it or what happened exactly there, but basically I wasn't allowed to wear my glasses for a week and I'm still in them for one more day. I find everything with a -8.5 prescription challenging in these glasses. I've been painting my attic slowly, but surely, going around the trims and doing the parts that I can reach without what will surely be an extremely tall ladder that I have no idea how to get up to the third floor.
I was only gone a few days whenever I was home, experimenting with the cold porcelain with my mom, yet somehow, the garden seemed to turn into a jungle with all the rain overnight. I've done a few little things, but not really. I need to stake my dahlias. I need to cut the elderberry back and, otherwise, I need to make something cool with my elderberry blooms.
I also have tons and tons of raspberries that need picking and something done with them, but again the glasses made every attempt that I had at working outside kind of just difficult for some reason from a depth perspective, even though they are in the right prescription it's just something about working in them versus contacts that really is throwing me off .
I've also been obsessively thinking about Gibson's (the cocktail) for the last two days which usually aren't that exciting but it must be my thrill with pickled items, of late, that I can't stop thinking of cocktail onions. I left them at the store yesterday and I regretted it for well over 24 hours, so on my return today I got them. So, as usual, I kind of want gibson even though I have 1 million raspberries to pick and two great raspberry cocktail ideas that I need to make for you all, however they all require more ingredient purchasing than one jar of cocktail onions. And despite that perhaps something tequila related might go better with dinner tonight 🤣
After Dinner Thoughts:
This was absolute luxury level delicious. I picked it out of the book at random, but have later read that this is the first recipe to appear in NYT 60 minute gourmet in the 60s in the column.
My Adjustments:
My only notes were that I used almost a pound of shrimp .98 . And not 3/4. I added a little extra lime juice to account for my extra shrimp. A little extra shallot (almost the whole thing) to again account for more shrimp. I did at least a drawer full of black pepper in the initial seasoning and a sprinkling of Maldon sea salt. I used salted Kerry gold butter. Closer to 3 tablespoons than 2. I put a pinch of Diamond Kosher in the Thai Jasmine Rice. And re seasoned a touch when it called for it. It's what I had, re the rice, but so good. I believe i’d copy it again. I used normal old Jose Cuervo White Tequila. 😍😍😍. So so so so good.

Other bits, I have been waiting for just the right dog friend again. I’d like said dog to be an Irish Setter and related to Mocha. I know i’m crazy, but that’s what I want. The connection of them is romantic to me. There was a younger puppy I had my eye on, but she ended up being unavailable. Last night, I got a message about a 7 year old named Emmie, who is most definitely related to Mocha. I could break down the family history of Saffron and Spice, but i’ll spare you. I just don’t know if I have it in me to go through the heartbreak again so soon with an older dog. I do love them though. I almost think I could if I had a little one along with the older. Emmie is beautiful, but the right one will come along and make itself known. I’m always on stand by. I’m not above putting a dog on a plane from Oregon. I did it with Mocha when I adopted her when she was 9 🤣 in the middle of working on a huge sugar flower wedding cake.
Otherwise, lots of attic painting. So, I know the dog will work when the timing is right!
