I just made up a recipe with Trader Joe's Cauliflower Gnocchi and it's kind of amazing .
All you need are basil, garlic, olive oil, Maldon sea salt and red pepper flakes . (Well, and some parmigiano reggiano, because that should be in your fridge anyway.) to make this Trader Joe's Hack
So, I decided to make up a recipe tonight with Trader Joe's cauliflower gnocchi on the fly. I grabbed it at the store, because you can eat the entire package for 330 calories, and it seems like kind of an unsung Internet hero of sorts. SO, not wanting to go to the store this evening. I tried to think of something that I can do with the things I had at home already. All you need to make this recipe is one bag of the frozen cauliflower, gnocchi, some red pepper flakes, basil, garlic, Maldon sea salt, and olive oil. The package also runs about $6.00 . This is a cheap dinner.
When I was reading all the articles kind of freaked me out a bit at the other cooking methods other than roasting . We can begin there. .
Cauliflower Gnocchi with Basil/ Garlic/ and Red Pepper Flakes
1 package Trader Joe’s Cauliflower Gnocchi
Olive Oil
Red Pepper Flakes
2 Cloves of Garlic (mine were strong from the Farmer’s Market)
Large handful basil leaves (did not measure)
Steps
1.) Preheat the oven to 425 degrees. Toss frozen cauliflower gnocchi with olive oil and a tiny bit of Maldon Sea Salt. Bake for 25 minutes. Turning them over halfway. (I also had less than a quarter cup of water in my sheet pan because I was looking at another recipe, but I don’t know that this matters.)
2.) Mince your two cloves of garlic. Chop your basil. Set it all aside.
3.) Heat 1 tablespoon of olive oil in a skillet when there is about one minute left on the timer. Add your garlic and a pinch of red pepper flakes (I was generous with my pinch, but I like spice) for 30 seconds over medium heat until fragrant. Pull it off the heat.
4.) Add the gnocchi to the garlic/ red pepper flake mixture. Can put it over the heat a little to mix it up if you like, but I kept pulling mine on and off the heat. Add a tiny pinch of salt and mix.
5.) Put in a bowl or plate of your choice with all the pan bits. Top with parmigiano reggiano on top.
